About Sake Brewery
Founded in 1702 (Genroku 15), Ozawa Sake Brewery is located in Sawai, Mitamura, Bushu, on the way that connects Edo and Koshu.
The sake brewery Warehouse built at the time of its founding has been carefully used while undergoing repairs and extensions.
Inside the sake brewery, there are Storage tanks with a height of 2m and wooden buckets are lined up.
In 2002, the method of brewing in wooden barrels was revived for the first time in 50 years, creating sake with a complex and gentle taste.
Sawanoi, the representative sake of Ozawa Sake Brewery, is derived from the famous water town of Sawanoi, where cool and abundant water flows.
Sawanoi has been popular as a local sake of Okutama, Tokyo for over 300 years.
Sawanoi is still built in the nature of Okutama as it was in the old days.

Sawanoi Daiginjo Kou
Sawanoi Daiginjo Kou is a sake made from Yamada Nishiki, which is said to be the best rice from the Special A district, polished to 35%, and made by the chief brewer and the brewers with the best technology.

Ozawa Sake Brewery holds sake brewery tours by reservation during business hours from Tuesday to Sunday.
We will talk about the brewery and the brewing process while guiding you through the brewery.
At the end of the sake brewery tour, you can enjoy Sawanoi’s “Kikisake”.

Event
Sawanoi Drinking Party
Ozawa Sake Brewery holds the “Sawanoi Drinking Party” every June or July.
At the event, you will be able to taste sake that was produced in the winter of that year while it was still in storage, and evaluate its quality and aging progress.
The name “Nomikiri” comes from the process of breaking the seal on the mouth of the barrel.

Sawanoi New Sake Festival
Ozawa Sake Brewery holds the “Sawanoi New Sake Festival” every October.
At the event, you can taste new sake shipped that year, aged sake, and the president’s treasured sake.
New sake, original cocktails, and snacks will be sold at the shop and kitchen car.
